I’m fairly certain I discovered the best invention of all time: Pre-made frozen potato skins. Have you ever tried to make potato skins the old-fashioned way? Wash the potatoes, bake the potatoes, wait for them to cool, scoop out the centers, bake it again, fill up the potatoes and bake them yet again! I’m exhausted just typing it out which is why when I saw these in my local grocery store’s frozen aisle I was over the moon excited and NEEDED to make something with them.



First we have to make the pimento cheese which could not be easier if you have a blender or food processor. These appliances definitely aren’t necessary but make life a lot easier. I used store bought vegan cheddar cheese, cream cheese, mayonnaise and of course pimentos. I’m vegan for the animals yall, not my health! šŸ˜‰

This pimento cheese is to die for and can be used for grilled cheese sandwiches, as a spread for crackers or a dip for veggies and/or chips.



Scoop the pimento cheese in your potato skins and bake. Top with green onions and drizzle a little “just ranch”. This vegan appetizer is perfect for football sunday and I guarantee your omni friends and family will NOT know the difference.

These pimento “cheese” potato skins are:

  • vegan
  • gluten free
  • delicious
  • easy




1 7oz jar of pimentos, drained

1 8oz tub of vegan cream cheese, softened

1 8oz bag of vegan cheddar cheese (2 cups or so)

1/2 cup vegan mayonnaise

salt to taste

2 boxes of potato skins (7 servings per box)


  1. Preheat your oven according to your frozen potato skins and prebake if box instructs.
  2. In your food processor or by hand combine your vegan cream cheese, cheddar cheese, mayonnaise, pimentos and salt. Pulse/mix until smooth but some specks of pimentos still show through.
  3. Fill your potato skins with your pimento cheese mixture and bake at 400 for 15-20 minutes or until potatoes are crisp and cheese is melty.
  4. Top with green onions or chives and vegan ranch (optional but recommended!)
