While Oreos are a great snack and also accidently vegan, I was starting to need some more options. These 4 cheap and healthy vegan snacks have been my GO TOs lately. Each snack is oil-free, healthy and way less than a dollar per serving. Potatoes, apples, nut butters and canned beans are not only super affordable but also packed with tons of nutrients. Perfect for a midday pick me up! Let’s get started:
SNACK #1: ROASTED POTATO SLICES
Roasted Potato slices, an easy side dish or snack. Wash outside of potato, slice into quarter inch slices and throw into a bowl. Add seasoning salt and paprika. Shake bowl around until all slices are coated. Place spiced potato circles on baking sheet. The trick to ensuring these are oil free is baking these on PARCHMENT PAPER. I swear, I only started using parchment paper this last year and I have no idea how I lived without it for so long. Parchment paper is by far the best trick to oil free baking. Bake for at 400 degrees fahrenheit for 30-40 minutes or until desired level of crispy has been reached.
Pro tip: Make them spicy by adding cayenne pepper or red chili flakes
SNACK #2: REFRIED BEAN TAQUITOS
My husband LOVED these especially because I added jalapeno slices in his (which are around 1$ for a jar here). These refried bean taquitos are so simple and so delicious. Perfect for tailgates, appetizers, and especially snacking. Simply take a corn tortilla, smear fat-free refried beans + jalapeno slices (optional), and roll them up. Use a toothpick to keep in place and bake at 400 for 15-20 minutes. Serve with salsa or guacamole.
Pro tip: Add mexican seasoning to your refried beans for extra flavor!
SNACK #3: PEANUT BUTTER & APPLE RICE CAKE
Rice cakes by me are 1$ for a bag of like 12. They are super healthy and super affordable. Top with peanut or almond butter and top with thinly sliced apples or bananas. Add cinnamon on top for a speedy snack your taste buds (and wallet) will thank you for.
Pro tip: Add pumpkin pie spice for a fall-inspired treat or drizzle maple syrup for extra sweetness
SNACK #4: POPCORN
I’ve only recently discovered how easy it is to make your own popcorn and I will never go back to buying that over-priced, over-salted and oiled store kind. Heat a flat bottomed frying pan on medium heat and add your corn kernels. Cover with lid and continue heating, shaking pan every 20 to 30 seconds. When they start popping, shake pan every 5 to 10 seconds. When popping slows, remove from heat and let cool before eating.
Pro tip: Add salt + nutritional yeast for a cheesy flavor
